Long before the wild blaze orange and neon yellow dyes became standard, white work wear was common place. It required no dyes to produce and when dirty they could be bleached white again and ready for action.
Stark white could be spotted from miles away against nearly any background from leafy green foliage, to brown deserts, to grey cityscapes making this highly visible option a natural choice for many jobs where safety depended upon being seen.

An old time railroader told me he wore them when they transitioned from the Steam engines to the new F unit electro diesel engines as a way of showing how clean the new F unit engines were.
Another Railroader told me they used them while running passenger trains in the 1950s and 1960s for a clean professional look.
Another old timer told me they wore them as brakeman for visibility and safety reasons.
